Alergia pokarmowa, podobnie jak nietolerancja, należy do grupy tzw. nieprawidłowych reakcji na pokarm, z tą różnicą, że w przypadku alergii mówimy o aktywnym udziale układu immunologicznego, a w przypadku nietolerancji – o braku alergii.
Alergia pokarmowa ma charakter reakcji natychmiastowej (typ I) lub IgE – niezależnej reakcji typu IV (typu opóźnionego). Natomiast II i III typ reakcji nadwrażliwości nie jest zazwyczaj wiązany z alergią pokarmową. W przypadku nietolerancji pokarmowej uważa się, iż mechanizmy patogenetyczne leżące u jej podstaw są złożone i nie do końca poznane (5).
Alergeny pokarmowe dzielimy na dwie klasy: 1 i 2. Alergeny klasy 1 to duże, rozpuszczalne w wodzie glikoproteiny (10-70 kDa), odporne na temperaturę, działanie kwasów oraz proteaz, zdolne do uczulania organizmu w trakcie ich spożywania (3, 7). Natomiast alergeny klasy 2 to termolabilne, trudne do wyizolowania czynniki, wrażliwe na działanie enzymów organizmu, nieposiadające możliwości uczulania w czasie ich konsumpcji (3).
Do najczęstszych alergenów pokarmowych (w zależności od geograficznej lokalizacji) w przypadku psów należą: produkty nabiałowe, jaja, białka mięs (wołowina, kurczak) oraz białka roślinne: z soi, pszenicy i kukurydzy (1). W rankingu alergenów dla kotów na pierwszym miejscu znajdują się zazwyczaj: ryby i produkty nabiałowe, a potem w kolejności: jagnięcina, wołowina, wieprzowina, królik, indyk oraz kurczak. W przypadku zwierząt potwierdzone są również reakcje krzyżowe między różnymi pokarmami, np. wołowiną i jagnięciną oraz wołowiną i mlekiem (kazeina). Natomiast u człowieka opisuje się również reakcje krzyżowe pomiędzy pokarmami a pyłkami (5).
